Crouching Snapper Hidden Scallop from the people who brought you "Baby Loves Mama's Chicken"...
Before preparing this dish, arrange all ingredients in groupings of 3's
and 5's. Raise arms directly above head, wrists bent, fingers pointing
downwards (earthwards), crouch to the ground‹wait three seconds‹spring
forward keeping arms up! land in a crouching position. Begin
cooking...
INGREDIENTS:
filet's of snapper or any other ol' white fish. (note: what may be "sea
bass" to Raleys could be "sea cucumber" to Chileans, but no matter.)
scallops (big 'uns) 4-5 per filet
olive oil
butter
dry white wine (Boeger)
italian parsley
green onions
1 clove garlic
lemon
salt
pepper
(for 2 filets)
rinse all the yuk off the sea food with filtered water (why replace one
evil w/another? unless you live in Montana then you can use the tap
water)
put scallops and filets in deep glass baking dish all snug (don't use
too big a dish).
Douse with olive oil, don't be shy. 2 "bloups" or so per filet. pour
white wine over till 3/4" deep in dish. squeeze some fresh lemon on
top.
sprinkle sprinkle sprinkle with salt. light grinding of pepper.
chop a cup or so worth of italian parsley. chop 5ish green onions. dumpthe greenery in the dish. flip and turn the filets and scallops till
coated with the goods.
NOW FOCUS HERE...
tuck the scallops underneath the filets. just tuck em on under there.
cut thin slabs of butter and place them on top of the scallops but under
the filets.
sprinkle some more salt for good measure.
bake in oven at, i don't know‹say 400? till they're done. bout 20-30
minutes.

Now i know no one wants to waste time with a complicated dinner when there is olympic coverage to watch-so here is a very quick (like apollo) and easy (??) recipe to prepare before the 7 o'clock start time.
ingredients: (for 2)
tuna steaks-fresh (1" thick)
1/2c BBQ sauce
1/8c soy sauce
3T balsamic vinegar
1 tsp. sugar
2T fresh grated ginger
1 package thin rice noodles (follow instructions on package.)
mix BBQ sauce, soy sauce, vinegar, sugar and ginger in flat bottomed dish.
Fry steaks in veg. oil as you like it. (i recommend seared).
Remove steaks from pan- place in marinade. coat completely in marinade.
serve over rice noodles. (slice over noodles if only seared)
serve remaining marinade in dipping dish along side steaks.
